Simplify

This is one of my ideas to help simplify the Paleo Diet. With the Paleo Diet, it seems everything either needs a ton of kitchen time to prepare, or none at all. Sometimes I can take the time to slice and dice veggies multiple times a day, however, in the morning, before work, cutting veggies every day gets a little tedious. Even packing raw veggies for lunch requires me to open several bags, and clean and cut many fruits and vegetables. So the theme here, simplify! Instead of keeping everything separate and cutting veggies every day, I combined all the veggies for lunches in a sort of raw veggie melody. In a large bowl, I mixed baby carrots, sugar snap peas (not a Paleo approved food, but delicious), and sliced yellow and orange bell peppers. With the mixture stored in the fridge, all you have to do is put some veggies in a bag or container to be set for lunch away from home. You could also make a delicious fruit salad to eat through out the week.

Likewise, I diced up a medium onion, a green bell pepper, and a package of mushrooms. This little mixture is now ready to be made into an omelet or egg scramble. Store the veggies in Tupperware in the fridge for 5-7 days. In the winter, I am planning on attempting to make some freezer dinners. Cut veggies that are then bagged, frozen, and made into a delicious soup or other meal.

For salad, you can always prep the veggies and instead of mixing them together in one container, keep them separate until each salad needs to be prepared. I know the Paleo cookbooks have recipes for salad dressing that are meant to last a few days as well. I will be giving some of these a try in the hear future!
