Finally, I did it! After many less successful attempts I have finally created a glorious chocolate chip recipe with a funky kick. Inspired from a non-paleo recipe I saw in Bon Appetite magazine, you will love these cookies, I promise!
Salted Chocolate Chip Cookies
Serving Size… 1 cookie
Yield… 14 servings
1 cup almond flour
¼ cup coconut flour
½ tsp salt
½ tsp baking powder
½ tsp baking soda
2 tbsp water
2 tbsp coconut oil, melted
¼ cup coconut milk
¼ cup honey
2 eggs
½ tsp vanilla
½ cup chocolate chips, chopped
Sea salt for garnish
Preheat
oven to 375 degrees. Mix all the liquid ingredients together first. Then add
the dry ingredients. Finally, chop and stir in chocolate chips. Drop onto a
cookie sheet lined with parchment paper. Sprinkle with salt then bake for 12-15 minutes. Remove from baking sheet and place on a wire rack to cool.
