Apple Delight Pancakes

I invented this recipe using two other recipes (one for blueberry pancakes and one for apple streusel) that I got from paleomg.com for inspiration. Enjoy!

Apple Delight Pancakes
Serving Size… 2 pancakes
Yield… 2 servings
                ¼ cup almond butter
                ½ cup flax meal
                2 tbsp apple sauce
                2 eggs
                2 tbsp honey
                ¼ tsp baking soda
                ¼ tsp baking powder
                1 tsp cinnamon
                Pinch of salt
For the topping
Yield… 2 servings
                1 apple, cored and diced
                1 tbsp coconut oil, melted
                1 tbsp almond butter
                2 tbsp maple syrup
                1 tsp cinnamon
                ½ tsp vanilla extract
                Pinch of salt
Start by making the topping. In a small pan, heat the coconut oil and add the apples. Cover to help the apples soften. Stir in the almond butter, maple syrup, cinnamon, vanilla extract, and a pinch of salt. Stir well and remove from heat. For the pancakes, whisk together the almond butter and eggs. Add the honey and apple sauce. Then the baking soda, baking powder, and flax meal. Sprinkle in a little salt and the cinnamon. Heat and grease a skillet. Use a 1/3 cup to scoop batter onto the skillet. You should make 4 pancakes that are about 5” in diameter. Now, make two stacks of two pancakes each. Put  some of the topping in between the two pancakes and then on top of the pancakes. Eat your heart out!
