Maple Walnut Cinnamon Rolls

These were inspired from a recipe for sweet potato bread I found!

Maple Walnut Cinnamon Rolls
Serving Size… 1 roll
Yield… 4 rolls
                ½ medium sweet potato, skin removed and cooked
                ½ cup cashews
                3 pitted medjool dates
                2 eggs, whisked
                1 tsp cinnamon
                ½ tsp vanilla extract
                ¼ tsp baking soda
                Pinch sea salt
For the inside
¾ cup walnuts, chopped
1 tsp cinnamon
            3 tbsp maple syrup
            1 tsp coconut oil
Preheat oven to 350 degrees. Run the dates and cashews through a food processor until well combined. Place the date paste in a bowl and add the cooked sweet potato. Mix in the eggs, cinnamon, vanilla, baking soda, and salt. Place in a 8x12 inch baking pan and cook for 15-18 minutes. Remove from pan. While the bread is baking, place coconut oil in a small skillet and add chopped walnuts. Let the walnuts toast for a minute or two, then add cinnamon and maple syrup. Spread your sticky mixture onto the sweet potato bread and then roll the bread, like a cinnamon roll. Let cool slightly before cutting into four discs.
